For proper use, it is necessary to score the cheese beforehand. Use the BOSKA scoring knife, available separately. A proper incision in the rind allows the cutting wire to work cleanly and ensures controlled cutting. When scoring correctly and never turning the crank the wrong way, one cutting wire can handle up to 100 Parmesan wheels. The Parmesan Pro uses a 0.8 mm cutting wire and comes with safety goggles, as the wire is under tension.

Good to know: the cutting wire is replaceable and available separately in sets of 10 pieces. The Parmesan Pro comes standard with 2 cutting wires. Made in Europe, the machine can also be used as a cutting board. This way, you work safely, efficiently and with confidence on every Parmesan wheel.
