Breakfast – Banana pancakes

A calm start to the day with a breakfast that’s nourishing and simply delicious. These banana pancakes are made without added sugar or fat and are perfect for easing into your morning, whether you’re sitting down for a relaxed breakfast or need something quick to make.

Ingredients (for 2 people / about 8 small pancakes)
2 ripe bananas, 100 g / 3.5 oz rolled oats, 2 eggs, 1 tsp baking powder, 1/2 tsp cinnamon

Toppings
Fresh fruit, 2 tbsp Greek yogurt, 1 tsp honey

Tip
Short on time in the morning? You can also prepare the batter the night before and store it covered in the refrigerator. Give it a quick stir in the morning and you’re ready to start baking.

How to make it
Peel the bananas and mash them in a bowl. Add the eggs and mix until smooth. Grind the oats finely using a blender or immersion blender and mix them into the batter together with the baking powder and cinnamon. Let the batter rest for about 5 minutes so it thickens slightly. Heat the electric griddle over medium heat and spoon small dollops of batter onto the plate. Cook the pancakes for 2 to 3 minutes until bubbles form, flip them over, and cook for another 1 to 2 minutes until golden brown. Serve warm with a spoonful of Greek yogurt, fresh fruit, and a drizzle of honey.

Lunch – Avocado toast

A lunch that’s quick to get on the table, yet still filling. Avocado toast is one of those classics that always works, especially when you prepare it warm on an electric griddle. Crispy bread, creamy avocado, and a softly fried egg make this a great meal for the middle of the day.

Ingredients (for 2 slices)
2 slices of sourdough bread, 1 ripe avocado, 2 eggs, pepper, salt, chili flakes, lemon juice

How to make it
Heat the electric griddle over medium heat and toast the sourdough bread on both sides until golden brown. Meanwhile, halve the avocado, scoop out the flesh, and mash it roughly. Season the avocado with pepper, salt, and optionally a squeeze of lemon juice. Fry the eggs on the griddle until the whites are set and the yolks are still soft. Top the toasted sourdough with the mashed avocado and place the egg on top. Finish with chili flakes to taste.

Diner – Gegrilde groenten met halloumi

A light yet satisfying evening meal that’s perfect for the end of the day. Grilled vegetables combined with golden-brown halloumi make for a simple and flavorful dish prepared on the electric griddle.

Ingredients
1 zucchini, 100 g / 3.5 oz bimi, 100 g / 3.5 oz green asparagus, 200 g / 7 oz halloumi

Dressing
75 g / 2.6 oz Greek yogurt, fresh herbs, juice of 1/2 lemon

Tip
This dish is a complete meal on its own, but it also pairs well with roasted potatoes, couscous, or flatbread.

How to make it
Slice the zucchini and make sure not to cut it too thin, so it doesn’t soften faster than the other vegetables. Combine the zucchini, bimi, and green asparagus in a bowl with a small drizzle of olive oil, pepper, and salt. Slice the halloumi into pieces about 1.5 cm / 0.6 inch thick. Heat the electric griddle over medium-high heat. Place the vegetables on the griddle and grill them for about 5 minutes until tender. At the same time, add the halloumi to the griddle and cook until both sides are nicely golden brown. Remove the vegetables from the griddle first and arrange them on a plate. Place the halloumi on top of the vegetables. Mix the Greek yogurt with the fresh herbs and lemon juice, then drizzle the dressing over the dish.
